Pumpkin Gingerbread bars

28 Sep

Hey guys!

First off, I wanted to thank everyone who’s been checking out my blog! I’m so excited to have some now followers, and I just wanted to welcome you guys!  As I mentioned last time, pumpkin season is upon us!  A few days ago my best friend called me and as we usually do, we discussed what we had recently been cooking and baking.  I’ve been on a cake spree, since there’s been a bunch of birthdays recently, and she was making some pumpkin gingerbread bars.  I of course immediately insisted that she share the recipe with me, because the sound of a pumpkin gingerbread bar sounded seriously amazing.  I’ve been dreaming of making these since she told me about them, so today when I finally had some time I immediately got to it!

Pumpkin Chocolate Chip Cookies

19 Sep

My favorite season is here! Pumpkin season!

One of my favorite things about the fall season (or just summer part 2 in Florida) is that pumpkin flavored items are sold everywhere!  I’m a bit obsessed with anything pumpkin flavored, and of course love to bake anything and everything I can with pumpkin.  So to kick off the season, I’ve started with some pumpkin cookies!  These are really tasty, fluffy cookies with a surprise medley of flavors created by the mixture of the pumpkin spices and the chocolate chips : ).  I find that even people who aren’t pumpkin crazed will still really enjoy these (my brother for example)!

Minecraft Birthday Cake!

15 Sep

Hey guys!

How’s everyone doing? I’ve been quite busy this week with some birthday cakes I’ve been making for friends.  One of the cakes I did this week was a Minecraft cake!  I was asked to make a Minecraft themed cake, so I went with the actual Minecraft cake as my theme.  If you’re interested on how to make your own Minecraft cake, follow the cut for my tutorial!

NYC Summer Trip!

8 Sep

Oh New York, how I love you!  Anyone who knows me, knows that NYC is basically my favorite place in the world as of late.  Since visiting last summer for the first time in my adult life, I’ve become enamored by the city *o* and I’ve visited 5 times since.  So when some travel plans fell through a couple of weeks ago, I decided to call up my best friend (because NYC is simply best experienced when you have your nearest and dearest tagging along for some adventures) and we decided on an impromptu trip during our extended holiday weekend!  This is probably one of the more crazy trips I’ve had, we experienced many things including winning some lotteries, walking into random festivals, walking around the streets at 3am, falling down in the middle of the street, and oh yea, meeting some rock stars ; )

And of course, let’s not forget the most important thing, eating everything lol.  So if I’ve piqued your curiosity, I invite you to keep reading : )!

Alpaca cupcakes for an Alpaca princess!

7 Aug

I keep telling myself I’ll post at least once a week, but then I end up having to travel or get so busy I forget, so I’m really determined to start posting more! So today I’m going to show you how to make super easy, and super cute cupcakes that look like Alpacas : ).

You’re probably wondering why I decided, out of all the animals out there, why I’d choose to make alpacas as my theme.  Well, it’s not because they’re my favorite animal (that spot in my heart is reserved for sloths), but they happen to be my best friend Laina’s (aka my Alpaca princess) favorite animal.   Her obsession with the cute fluffy animal runs as deep as mine for sloths (which is a lot of love, if I do say so), and her birthday was right around the corner.  Normally I’d make her a cake, but since we’d be out of town attending a convention over the weekend, I decided to make something more portable, and thus alpaca cupcakes were created.

Some of our birthday party attendants included a royal alpaca, and a not so happy money octopus.

Lemon Macarons with Lemon Curd

22 Jan

Hello everyone!

How is everyone’s week going?  I was happy to have Monday off,  I always feel like I accomplish so much more by just having one extra day off.  I was finally able to get my shoe closet project started, but most importantly I had some time to bake : )!

Last week, a coworker of mine who has a lemon tree brought in a bunch of lemons.  I gladly took a few and immediately began to think what I could make.  My mind of course went straight to my favorite dessert:  Lemon macarons.

For those of you who don’t know me, I absolutely love anything lemon flavored.  Lemon cake, lemon tea, lemon cookies, lemon frosting, lemonade, and of course lemon macarons.  Lemon macarons are probably my favorite dessert, ever.   I used to make them with lemon buttercream, but recently I’ve been obsessed with lemon curd, so it’s only natural that I combined lemon macarons with lemon curd.  Additionally, lemon curd is great because it’s a perfect way of using those egg yolks that normally would get discarded while making your macaron shells.

Russian Tea Cakes

20 Jan

Russian tea cakes (also known as Mexican wedding cookies) are absolutely one of my favorite cookies.  If you’ve never had them before, they’re absolutely fabulous.  They’re crumbly, crunchy, soft, and sweet, but not overpoweringly so.  My family does tea time (when our schedules aren’t crazy), and this is a great addition, as it’s a perfect dessert to go with tea.

I surprisingly had never made Russian tea cakes till a few weeks ago when a friend of mine sent me his super secret family recipe.  Funny enough, it turned out this recipe was also the Betty Crocker recipe (we had a good laugh at that)!  In any case, this recipe is fantastic and super easy to make.  Let’s get started!
