Best Gingerbread cookies ever!

Hello everyone!

Please forgive my absence, things have continued to be ridiculously busy.  I’ve been going non stop since I got back from Kansas.  Unfortunately after the Disney Christmas Parade filming, I got horribly sick, right in time to have a nasty cold for my birthday lol.  After that my best friend came to visit for Christmas which was wonderful because we love to cook together.  I really wanted to make gingerbread cookies so we found a fantastic recipe that we modified to make the best gingerbread cookies I’ve ever had.  I’ve been wanting to post this forever, but two days after Joani (my BFF) left, I flew over to spend NYE with her,  so I’ve had like no time to do anything!  Anyways, a little late, but hey, it’s never too late to make gingerbread cookies : ).

Pumpkin Chocolate Chip Cookies

My favorite season is here! Pumpkin season!

One of my favorite things about the fall season (or just summer part 2 in Florida) is that pumpkin flavored items are sold everywhere!  I’m a bit obsessed with anything pumpkin flavored, and of course love to bake anything and everything I can with pumpkin.  So to kick off the season, I’ve started with some pumpkin cookies!  These are really tasty, fluffy cookies with a surprise medley of flavors created by the mixture of the pumpkin spices and the chocolate chips : ).  I find that even people who aren’t pumpkin crazed will still really enjoy these (my brother for example)!

Russian Tea Cakes

Russian tea cakes (also known as Mexican wedding cookies) are absolutely one of my favorite cookies.  If you’ve never had them before, they’re absolutely fabulous.  They’re crumbly, crunchy, soft, and sweet, but not overpoweringly so.  My family does tea time (when our schedules aren’t crazy), and this is a great addition, as it’s a perfect dessert to go with tea.

I surprisingly had never made Russian tea cakes till a few weeks ago when a friend of mine sent me his super secret family recipe.  Funny enough, it turned out this recipe was also the Betty Crocker recipe (we had a good laugh at that)!  In any case, this recipe is fantastic and super easy to make.  Let’s get started!
